Wednesdays tend to not be fun, but sometimes they can be lovely. I got home and my box from VT had arrived! Luckily I had just picked up a case of Long Trail Blackbeary on my way home so I had a VT beer to pour in my brand new VT beer glass.
Then it was time to make a new buffalo chicken recipe for the beginning of the football season. They are called buffalo chicken cupcakes, but really they are more of buffalo chicken rolls.
You cook up the chicken in a skillet with onions and buffalo sauce and then lay it on pizza dough. Then you add liberal amounts of cheese and roll it up like cinnamon rolls.
Place in the a muffin tin so they keep their nice shape.
I added extra onions and sauce to the tops. Then I baked and they came out pretty awesome.
I needed ranch to dip mine in but Alicia and Albert enjoyed dipping theirs in Franks. Alicia couldn't even keep her hands off long enough to get a picture. It was a nice little evening. Beer, buffalo chicken, and football.
